Picanha is the noble part of the sirloin and our signature cut. Our gauchos chefs leave a little bit of marble on the picanha because our grill rotates each skewer of meat – this means each skewer is marinating the whole time it is slowly cooking on the grill.
The bottom sirloin is the cut with the most consistent marble. Seasoned only with sea salt to preserve the full flavors of the beef, this is one of our juiciest cuts from our grill.
This is our leanest cut of beef and one of the premium selections. Galpão Gaucho’s executive chef chooses a traditional Brazilian preparation style, which uses only sea salt, in order to high-light the quality and flavor of this cut.
